French Onion Soup



I decided to make this because I had a bunch of onions that were threatening to go bad and I love French Onion Soup. I just needed to buy the wine (which I don't at all mind :P) and I was ready to go.

This stuff is really cheap to make and very filling when you account for the bread and cheese topping. Just throw the leftover soup in the freezer.

This soup is also extremely powerful if you're sick, diabetic, or have high blood pressure among other things.

Magically speaking it is good for protection, healing, and strength/energy.

French Onion Soup
Serves 6

You Need:

  • 3 tablespoons olive or vegetable oil
  • 4 large onions, sliced (onions have tons of potassium and are good for high blood pressure, reducing chest inflammation, alleviating sinus symptoms, and lowering blood sugar)
  • At least 2 cloves garlic, minced (garlic regulates blood sugar, is anti-viral, antioxidant, cures acne, and is good for protection)
  • 2 tablespoons flour
  • 3 cups beef stock
  • 1 cup dry wine (wine helps strengthen the bones, decreases the risk of ovarian cancer, and increases good cholesterol)
  • 1/2 teaspoon dried thyme (thyme is very high in vitamin K, calcium, manganese, fiber, and iron. It's good for coughs, bronchitis, and chest congestion, it help guard against nightmares, gives courage and confidence, and invigorates the spirit)
  • 1 bay leaf (bay is good for psychic powers, purification, healing, protection, energy, power, strength, inspiration, wisdom, meditation, defense, creativity)
  • salt & pepper to taste
  • 6 slices crusty French bread
  • butter (optional)
  • grated mozzarella

Directions:
  1. Saute onions in oil in pot over low heat until tender and golden yellow.
  2. Sprinkle flour over onions; cook a few minutes more, browning the flour well.
  3. Add stock and wine and bring to boil
  4. Add thyme and bay leaf. Reduce heat, cover, and simmer gently for 20 minutes or so.
  5. Add salt and pepper to taste.
  6. To prepare, spread bread slices with butter and toast under the broiler.
  7. Spoon soup into 6 oven-proof bowls. Top each bowl with a slice of toast.
  8. Sprinkle shredded cheese evenly over each bowl.
  9. Place bowls on cookie sheet and bake until cheese is bubbly and golden.
  10. Enjoy!
